Each morning begins with the preparation of fresh dough using flour, water, salt, and natural yeast. The mixture undergoes a series of folds and rests over several hours, developing gluten structure and complex flavors. This slow fermentation process typically spans 24-48 hours, creating the characteristic taste and texture of our pizza.

Ingredient Assembly

As pizzas are ordered, dough balls are carefully shaped by hand, stretching to create the desired thickness and shape. Tomato sauce is applied with precision, followed by selected cheeses and toppings. The assembly process respects the balance of ingredients, ensuring harmonious flavor combinations without overwhelming the crust.

Baking Process

Each pizza transfers to the wood-fired oven on a peel, sliding onto the hot stone floor. The intense heat, reaching temperatures above 800°F, cooks the pizza in 60-90 seconds. During this brief period, the crust develops its characteristic char while the toppings reach optimal doneness and the cheese achieves perfect melt.
